I need to backup our SBS2003 box - and I need your recommendations!

So here's our situation: we have a SBS2003 box that runs our whole business. It's running a file server and Exchange and has 1TB of RAID5 that it stores everything on. Right now it has an ancient version of Symantec Backup Exec running on it that just isn't meeting our needs. Currently, it backs up daily to a pair of 2TB USB HDDs, one of which is swapped off site weekly. I have two Iomega ix4-200d 3TB NAS boxes at my disposal. One is in the same building as the server, and the other is in a nearby building that is connected via hardware VPN over a 3x3 connection (slow I know, but good luck getting THAT upgraded!)

Here's what I'm looking for: something that can back up our server, including Exchange, to the local NAS. Then, I'd like to be able to replicate the backup from the local NAS to the remote NAS. The NAS can handle this itself, or the server can. I'd like the ability to do everything from a single file or Exchange item restore all the way to a bare metal recovery to dis-similar hardware. Budgets are tight, but I'm sure I can sell it to management at the right price. I don't have a need to backup our desktop or laptops. Despite my users driving me crazy sometimes, they are really good about storing all their data on network shares on the server rather than on their local boxes.

Any recommendations? Is there an open-source product that might be the way to go?
