1 MS SQL server with SharePoint Databases (~20GB)
3 File servers (~2.5TB)
1 Domain controller to backup AD
Per company policy, we can't back up to the 'cloud', so that is not an option,...
I'm only interested in backing up the data in the interest of saving space, and here's what needs to be backed up:

Two of the file servers are physical machines with local storage and the rest are VMs on ESXi 5.5 with their data residing on an Equalogic.
